I’m baking again. Ha All kinds of pies I made last night and couple today too. It’s better than air freshener any day !!
This here recipe is simple, easy and always turns out great. I have never made this Shoo Fly Pie and it didn’t turn out perfect. It’s a thick and hardy type pie. YUM !!
Shoo Fly Pie
1 cup flour
2 Tablespoons soften butter
3/4 cup dark brown sugar
Mix that all up in a bowl. I use a fork because it cuts the butter into the mixture better. Mix till all looks even. Should see tiny clumps of butter not big globs.
Scoop 1 cup of that mixture and save for topping.
In the same bowl with the remaining flour mixture add :
1/2 cup molasses
1/2 cup King Syrup
3/4 cup hot water
Don’t mix it up yet. In another small dish add 1/4 cup hot water and 1 teaspoon baking soda – mix till dissolved and then add it to the bowl.
Now you can mix it well.
Pour into pie crust. Sprinkle on top the 1 cup of saved flour mixture. I like to not sprinkle so close to the edges because while baking the edges without the sprinkle crisp up some, then the pie is perfect for cutting warm. I like a warm Shoo Fly Pie in the cooler months of the year.
OK now for the baking. Preheat the oven to 400. For the first 10 minutes of baking you want the pie to set .. so bake for 10 minutes @ 400. Then turn down to 350. and bake additional 35 minutes. Approx.
I make my own pie crusts a day in advance because their easier to roll I think. If you make your own pie crust, roll thin. You don’t want an apple pie crust on a Shoo Fly Pie.
Pastry Pie Shell Recipe
1- 1/4 cup flour
1/4 teaspoon salt
1/2 cup butter (cold and chopped into small pieces)
1/4 cup cold water
Combine flour and salt in big bowl.
Add butter pieces until mixture looks like crumbles.
Stir in water a tablespoon at a time, until a ball forms.
Wrap in plastic and refrigerate a couple hours.
